Kat’s Kitchen: Mega Immune Boosting Juice

This week we’re keeping things simple with an easy juice recipe that packs a punch- both flavor and benefit wise. Just a few sips and you’ll give your immune system the boost it needs to make it through winter and beyond.

Ingredient highlights:

-Ginger: Encourages more efficient digestion so food doesn’t linger in the gut as long. It can also reduce bloating and gas because of this, in addition to stabilizing blood sugar levels. It also contains antioxidants that fight off damaging free radicals, as well as a number of compounds with anti-inflammatory properties.
-Turmeric: The number one benefit of turmeric is that it's an anti-inflammatory aid. From easing skin flare-ups to protecting the body against the dangers of chronic inflammation, this is a key benefit to seek in your diet. It also raises the antioxidant capacity of the body, as it’s not only full of antioxidants itself, but some research points towards its ability to stimulate others as well. One benefit of this is that the breaking down of collagen is slowed.
-Lemon: This citrus fruit is packed with Vitamin C- just one has about 50% of your daily needed intake. Plus, citrus helps the body absorb plant-based iron. So if you rely less on meat and more on lentils, tofu, and spinach to get your iron, you’ll want to be including citrus fruit in your diet.

Full measurement and prep instructions:

-2 inch piece of fresh ginger, peeled and chopped
-2 tsp turmeric dried or 2 inch piece fresh, peeled and chopped
-2 lemons, juiced
Directions:
-Blend ingredients together, letting mixture rest in between blends for best results

I said we were keeping things simple today! This juice recipe comes together like a power shot, so it’s definitely concentrated for quick results. But if the flavor is just too strong for you, add a cup of water when you blend and sip smoothly like a standard juice. If you’re having it to fight off a cold or other illness- feel free to add some soothing honey for a touch of sweetness and throat relief.
You can also make this in big batches, just multiply the recipe by however many servings you want! This is a great idea for stressful, chilly, and busy weeks when your skin and body need a boost. Be sure to keep it in the concentrated form when making a large batch- then dilute with each individual serving if needed. Separation is natural, so just give your container a little shake before you pour and enjoy.
One last thing to note- if you can handle the intensity of the shot and are up for an extra kick, add a bit of freshly ground black pepper. This boosts the body’s ability to absorb the nutrients from the turmeric!
